Course in a Minute:
The course, Make the Best Pizza Crust, is a fun look at how Neo-Neapolitan pizza crusts can be made from scratch at home. I highly recommend the course for anyone wishing to make their own pizzas and crusts at home but who would enjoy seeing someone else create the dough before they attempt it.
Course Skill Level:
The skill level for this course is listed as all levels. However, I have several suggestions for beginners.
- If you are someone who is not familiar with making sourdough or yeast doughs from scratch, I would recommend running through the whole course first, simply watching how things are done and taking any notes that stand out to you.
- If there are terms used that are unfamiliar to you, I think you’ll benefit from looking up the term definitions on google.
- Also, I recommend that beginners take the time to read through Teresa’s ebook (and off site videos) on starting sourdough that is included in the course’s section one. That is what I decided to do and it worked out really well for me.
In this course, Teresa walks you through the process of making your own, made-from-scratch pizza dough. The first two sections consist of Teresa welcoming you into the course and explaining a few things, followed by several text lessons.
There is a text lesson that lists the actual recipe for the Neo-Neapolitan dough with a few variations depending on your circumstances (i.e. overnight prep or not). I was disappointed that the recipe is only in metric, meaning that more time may be needed to convert the ingredient measurements before you can start creating the dough (and having a food scale is a must).
In section three, the video tutorials start up and they go quickly. They are easy to follow. Toward the end of the course, Teresa offers a few ideas for pizza toppings and sauces including an idea for desert pizza (Yes! 😉 ).
Teresa covered everything listed in the course objectives.
During the course, Teresa uses a stand mixer (KitchenAid) with the dough hook. When cooking the pizza, a pizza stone is recommended. And since this pizza crust is of medium thickness, having a good pizza cutter is highly recommended, although her smaller pizza cutter does work.
While there is a lot of information covered in the course, it never got overwhelming. This course has a good re-watchability factor – I will be watching the video again before making the dough until I’m comfortable with the process.
There is a quiz, it isn’t long, but read the recipe before taking it!

The key take-away for me is to discover that made-from-scratch pizza dough is not only possible at home, but that it is a lot more fun than I had first thought.
